Switch from uBar in three steps
Quit uBar
Quit uBar first so it saves its settings. You don't have to uninstall it.
Import it into Moor
In Moor, open Settings → Docks, choose +, then Import from uBar. Moor makes a new dock with the same apps, in the same order.
Check the dock, keep the way back
Look it over, then drag things around in edit mode (Control-Option-E). Your original Dock was saved first, and quitting Moor brings Apple's Dock back.
